Today I want to share with you one of my favourite dishes I have in my deli in this time of the year! Which time am I talking about? The asparagus season, obviously!
Now this dish (from one of Antonio recipes) is very easy to make and it looks pretty amazing. Most of the time i just buy them from the deli but I’ve tried to make them myself.
You will need:
1kg of large asparagus (get rid of the stalks)
3 or 4 spring onions (remove the top and peele them)
some black pepper
About 100 ml of extra virgin olive oil (I love to put some extra before serving)
1 to 3 bunches of thyme (which in this occasion is always very scenographic)
Put together in a bowl the asparagus and your peeled spring onions and dress them with extra virgin olive oil and a pinch of salt. Chargrill them until are well marked and tender, adding some thyme to the chargrill half way through.
Season a little bit more if they need to, add a drizzle of extra virgin olive oil and display your chargrilled asparagus on a beautiful serving bowl.
